OK, maybe campfire s’mores are the best, but these are pretty darn close. Last night my daughters and friends were craving s’mores while they watched a movie. Since we were lacking a very important ingredient – the campfire – I got creative, and they results were deeeelicious!
- Turn the oven on “Broil”.
- In a 9-inch skillet, melt 2 1/2 tbl of butter.
- Add 1 1/2 tbl sugar and 3/4 c graham cracker crumbs (about 12 graham crackers finely chopped in a food processor or blender). Mix over the heat and let it get hot, not burned, but just enough to start caramelizing the sugar a little bit, it really adds a great flavor. This just takes a couple of minutes, while stirring with a fork.
- Remove from heat and using the back of the fork, press the crust into the skillet evenly.
- Put the skillet under the broiler for just a minute or two, you don’t want to burn it, you just want to set the crust.
- Remove the skillet from the broiler and add 2 Hersey’s bars, broken up evenly over the top of the graham cracker crust, then layer that with marshmallow halves.
- Place the skillet back under the broiler with the door ajar until the marshmallows are toasted golden brown. Watch them closely, they’ll burn fast! I know this from experience…
- Grab a fork and enjoy! They’re gooey and sweet, and the caramelized sugar gives them a great depth of flavor. I hope your family enjoys this fun dessert as much as mine did. Let me know what they thought.

Thanks Bruna, it’s a hard habit to break. I’ve had few suggestions, like adding Reese’s peanut butter cups…sounds like something I need to try!
